The selection of the beans
CANONICA craftsmanship is developed within our workshop that combines artisanal, modern and traditional recipes. From grinding the beans to recipe testing and refining the final product, each step is carefully executed to pair the raw ingredient with the right flavor to allow the aromas to shine through.
The creation
In 2011, the company created its own chocolate laboratory in Geneva in which all of CANONICA’s exclusive creations are made.

Behind each Geneva “House” of premium chocolate is the know-how of the chocolate makers “Chocolatiers” ; more than a team, it is today a real family united in a constant search for excellence.
For several years, our chocolate makers have been thinking and creating all these unique and exceptional creations. Some of them have been part of this family since the beginnings of the first production laboratory and today they have been working together for more than 10 years on our unconditional love of chocolate.
